Recipe: Chocolate Squares

This post is something that I’ve been thinking about doing ever since I started the blog. They may not sound special, they might not even look that special, but Chocolate Squares are very often my first choice if I decide that I really want to indulge my sweet tooth, and making them brings back fond memories of my mum teaching me how to bake.

I wish I had a picture of the original recipe that sits in her kitchen drawer – a slightly faded piece of pink paper with a few grease spots on it that details only the ingredients (and quantities) that you need, the method being something that you simply have to remember from one time to the next. Before I left for University we actually wrote it down (and worked out the calories per serving – with hindsight, a mistake!) and over the years I’ve copied it out for a handful of people who seemed to love them as much as me. Finally though, I’ve decided to just put it on the blog, method and all, in the hope that these little treats might become someone else’s favourite, too.




Ingredients



·      16oz digestive biscuits

·      8oz butter

·      8oz granulated sugar

·      2tbsp golden syrup

·      1 small tin of condensed milk

·      200g dark chocolate (or milk chocolate if you prefer)



Method



1.   Crush the digestive biscuits to fine crumbs.





2.   Put the butter, sugar, golden syrup and condensed milk into a pan and heat gently until it reaches boiling point.




3.   Boil the mixture for five minutes, stirring slowly but constantly to ensure that none of it sticks to the bottom. The aim is to have a smooth caramel-coloured mixture with no lurking burnt bits by the end of the five minutes (using a non-stick pan can definitely help with this!).




4.   Take the pan off the heat and gradually stir in the biscuit crumbs.




5.   Line a 10x10 inch baking tray with baking parchment, tip in the mixture and spread evenly. Leave to cool.




6.   When the biscuit base mixture has cooled, melt the 200g of chocolate




7.   Pour this over the top of the base and spread evenly. Leave to cool and set.




8.   Cut into squares and serve. Enjoy!

    1. Thank you :) This was one of the first times that I'd used my boyfriend's DSLR camera to try and get some decent photos rather than the usual ones I take on my phone, I was quite nervous and they took a while to process but I like them much better than my usual standard!

      Glad there's someone else out there that can appreciate how amazing these taste even if they don't look the most beautiful :) (and I'm relieved to hear I'm not the only one who has to hold back from eating the whole tray!)
