Cheat’s Baileys and Malteser Cheesecake

This week it was my (basically) mother-in-law’s birthday, but the party was delayed until this weekend, when everyone returned home from university for the long weekend. Instead of a birthday cake, however, she decided she’d like a Baileys Cheesecake. For a variety of reasons this turned into Cheat’s Baileys Cheesecake (which isn’t actually cheesecake at all, but a creamy dessert that looks a lot like cheesecake).

This, then, is my first post detailing my own attempts in the kitchen. Also, I’ll warn you now, this is one for those people who have a really sweet tooth.

Ingredients (to serve 6)

·      200g digestive biscuits
·      80g butter
·      225mls cream
·      50g icing sugar
·      Maltesers (135g bag)
·      100ml Baileys (or to taste)



Method

First of all, put the biscuits in to a mixing bowl and crush until you are left with a bowl of biscuit crumbs. (I find it easiest to do this with the end of a rolling pin)



Then, melt the butter in a pan, add to the biscuit crumbs and mix. At this point, you can add chocolate chips if you want to make the whole thing more chocolate-y.



Put this biscuit mix into a greased tin, spread evenly and and press down slightly so it’s all fairly level. (Don’t compact the mixture too much or it will go rock hard when it sets)



Put the tin in the fridge to chill for half an hour. While it’s in the fridge, chop the Maltesers. I tend to do some in halves and some in quarters so you get different sized bits of Malteser throughout.

Pour the cream into a mixing bowl and whisk, gradually adding the Baileys and icing sugar. When whisked, stir in the chopped Maltesers.

Whip the cream (gradually adding the Baileys and sugar)...

...until it looks something like this.


Take the tin out of the fridge and spoon on the topping. Then put the tin back in the fridge and leave it to set for at least three hours. 



Serve with a dusting of cocoa powder and an extra drizzle of Baileys (if you’ve not got enough already!).

*This is based on the exact brands that we used, so will vary slightly depending on exactly what you use. Adding more Baileys to the mixture will also (obviously) up the calories.
